Choose your favorite flair for Butternut Squash Soup

Between Garden & Gun’s magazine and the Ageist website, we love digging up articles from them to share with you on AgingTopic.. and this time we are showcasing two terrific recipes for my favorite soup at this time of year.  If you don’t consider yourself a great cook, the simpler recipe below from Ageist only has 8 simple ingredients with easy Instant Pot instructions (or instructions if without one).  Garden & Gun steps it up a notch with more seasonings and a few more steps involved, but if you love to play in the kitchen then this may be one of your new favorite recipes! Chef Adams of the Red Hen in Lexington, Virginia brings interesting perspective to squash soup as he mentions that squashes cellar well and become sweeter with age as the starches convert to sugars meaning every batch will taste a little different.. and he offers versatility as he says you can swap out the butternut squash with pumpkin or sweet potatoes or acorn squash..  or take the curry out and add roasted garlic..

I guess a seasoned chef would know these things but I need all the advice I can get!  Either way they are both delicious and will delight most every crowd.  Let us  know if you give this a try!
