Honestly, the idea of replacing my splash of cream in the eggs with a splash of extra virgin olive oil was a bit jolting to my traditional mind, but when I made the decision to at least give this recipe a try, it was a fabulous surprise! The step of being able to put in the eggs after taking the pan off the fire was also contrary to habit, until I realized how logical it is and how much easier it was to then finish them when the rest of breakfast was ready. Hot, creamy eggs make every breakfast feel special.
