This week we have a hearty and simple stew. Butternut squash is by far my personal favorite squash, and I am always amazed by the things you can do with it in the kitchen. Adding it to salad, putting it in a stew, even mashing it into a side – the possibilities are endless! Enjoy this beef and butternut squash stew, made all together in one pot for your convenience. If you ask me, I’d add some red wine and a few more rosemary springs – but have fun with it on your own terms. Cheers to a heavy dish this week leaving you full bellied and satisfied!
