A feel-good favorite for summertime, this chicken cutlet recipe brilliantly combines feta and summer squash! Easy to make (and clean up) and done in under thirty minutes, I’ve fallen for this recipe for all of its different, delicious components. The three main ingredients sold me on cooking it for the first time, and I was pleasantly surprised by the addition of capers and the thick benefit of flour! While you have feta at home, I recommend using it as often as possible! When I first made this recipe, I served a watermelon-feta salad for an appetizer. Sprinkled with mint and fresh lime juice, this is an appetizer that can be served during any possible occasion. My mother was first to introduce me to the watermelon-feta salad, and I have been forever thankful!
