An incredible last taste of summer for the season, this lemon artichoke chicken rice is packed with flavor that you’re sure to fall head-over-heels for. Simple to make, all in one pot as usual, and inexpensive makes this dish even better! We all associate the words “from scratch” with better, healthier food, but sometimes it’s just as delicious and healthy to use something canned. Just as you wouldn’t go picking rice from your inexistant rice field, there’s no need to burden yourself with tedious artichoke peeling – this recipe works perfectly with canned or bottled artichoke hearts. My personal favorite are the artichokes in the glass bottle with a seasoned marinade in there with them. The flavor of the rice from cooking in chicken broth combined with lemon, spices, and chicken is a classic combination that’s often forgotten. Add feta and parsley on top and you’ve made it exceptional. If you want to add some vibrant colors and another flavor, I added cherry tomatoes when I made it! Don’t waste the last couple weeks of summer rushing into fall – We have plenty of time to enjoy hot dishes and pumpkin lattes once the season truly changes – make every last second of your summer count!
